Just some stuff...
*Last night was our Relief Society Enrichment and we had a really great dinner. I'm on the Enrichment Committee and it was tons of work but worth it! Our Menu was:
Stuffed Pork Loin;
Mashed Yukon Gold potatoes with skins on and blended with whipping cream, butter, salt and chives;
Steamed Baby Carrots tossed with butter and brown sugar;
Spring Medley Salad with mandarin oranges, craisins, blueberries, Feta Cheese Almonds and a sweet dressing,
Rolls, and
Miniature Bundt Cakes with Cherry Pie Filling and whipping cream on top.
*It was fancy! But I think I had too much salad and couldn't fall asleep last night. I finally got up at 1:20 am and got my laptop and sent off some emails and browsed around online until about 4:00am when I was finally able to fall asleep.
*Laren found me asleep on the couch in the family room this morning and asked me what I was doing down there. I seem to have my sleep disturbed rather easily and it is no fun at night and then the next day I'm SO sleepy (like today)!
*I just got done making some fudge, it was my first time, believe it or not! We'll see if it turns out. I need it for the gals I VT. My companion just told me she is not going to be able to get to it this month and I had been patiently waiting for her to get our appts. scheduled. I wish I could have known sooner so I could have already gotten it done!
*Rilyn is being a little slow-poke on getting her weeks worth of homework done. We have worked on it every day this week and she never wants to finish. It is kind of a lot, but she is doing it more begrudgingly each week--must be getting close to Christmas or something?
*I'm SO tired, did I mention that?
*I really need to run to Target, Kohls and Walmart today. Do I want to? No.
*Tomorrow I need cookies for Kyle's class party.
*We still need to wrap Rilyn's gift for her classroom gift exchange tomorrow. I told her we wouldn't do it until her homework is done.
*Laren called me from work saying he is feeling sick.
*Our kitchen cabinet order (the replacement pieces) came this morning. Yay! Maybe now we can finish that project?
*I got 2 Christmas Cards returned for having wrong addresses. Hmmm, now I'm going to have to readdress them and buy more stamps. We'll see if that happens!

That is one fancy dinner! I'm glad it was worth all the work.
I made fudge for the first time last year! I couldn't believe how easy it was. I finally just bought some stuff to make it this year. I can't have it around too early...or...there'd be none left for Christmas!:)
Glad you are having so much fun this holiday with your kids. You blog is becoming a cooking one--but tis the season! We all have our pity parties and glad you could lift out of yours. I think there is just so much to do and so little time that all the stress can get to us at times. I know it does to me.
I've never made fudge, either. We were given some YUMMY YUMMY fudge, though! Oh, I'm dying eating it.
