Yummy Dinner!
Today I was having one of those Horrible, No Good, Very Bad Days. But, I could not keep it that way mainly because it was a "pity party." I hope I'm not the only one who feels sorry for myself from time to time.
It took me awhile to snap out of it, but a couple of things that helped were: prayer, opening the scriptures to a verse that helped me realize my blessings (forgot to check the reference, otherwise I would share it with you), a nice chat with my Sister on the phone, talking on the phone to Laren and crying to him a little (he's sweet and understanding, which helps a lot), mailing a small package to my Missionary Nephew in Alaska, and making Dinner for a family in our ward whose Mother has reproductive cancer.
Lucy gave me this great recipe:
Cranberry Chicken Dinner
4 chicken breasts (I actually cooked 7 chicken breasts, the Costco ones, and several chicken tenders with this recipe, it makes oodles)!
1 package of Lipton Onion Soup Mix
1 Can Cranberries
1 small bottle of Russian Dressing.
Mix everything together so that each breast is equally coated with the cranberry sauce.
This can be frozen for a later meal, or baked at 375 for one hour in a baking dish. (cook with foil for 50 minutes and uncovered for ten)
Voila! Juicy and scrumptious!
It was SO tasty! I made the same for my family and served it over rice.

So, who would have imagined that spending 30 minutes in line at the Post Office to mail a package and spending a couple hours in the kitchen baking would have turned my spirits around but it has!!
Now, I'm in the mood to do my 12 Days of Christmas with my sweet kiddo's!!

Kari, I have them days too. You are not alone in that:) Just remember that it does get better:) I am glad to hear that you were able to talk to Kalie and Laren and make yourself feel better:) So what did you guys do for your 12 days of Christmas? Darcie, last night we looked at Christmas lights and came home and had cookies and fudge that the neighbors had brought over.

Oh yes, I'm well acquainted with those days, and I know it's not always (or ever) very easy to snap out of it, so good on ya, ending up with a good attitude and a good experience!
Funny, I read that book to my kiddos last night. :) I hadn't read it for a long time. I am going to try that recipe tonight! Look so yummy.
I'm glad you tried it! I think the ingredients make it sound kind of scary, and I'm not sure I would have tried it just by looking at a recipe. Luckily, I had the finished product first and it is yummy! And easy!
